Cocked Hat Cookies: Chambergos

These are Great Grandma’s Cookies called Cocked Hat:



  • 2 1/4 of flour
  • 1/2 C. of sugar
  • 4 egg yolks
  • 1 C. butter



  • 3 egg whites
  • 1 Tbsp. flour
  • 4 Tbsp. sugar
  • 1 Tbsp. water
  • Juice of 1/2 a lemon
  • 2 Tbsp. colored sugar



Mix all the cookie ingredients together until well combined. Pat them into small, fat cookies (approx. 2″). Place them on greased cookie sheets and bake in a 200 C oven. Once golden, remove from oven and let cool.

Beat the egg whites until stiff peaks form. Place the sugar and the water in a small saucepan and cook over a low flame until the sugar has dissolved. Add the sugar water mixture to the egg whites, beating continuously while doing so. While still beating the egg white mixture, add the flour and the lemon juice.

To make colored sugar, place the sugar in a bag, add a few drops of food coloring and shake until colored.

Top each cookie with the frosting and colored sugar.

These cookies can be made up to 24 hours before serving and stored in an airtight container.
