“Maria’s Galletas” Pie Crust Recipe?

Anybody have it nailed down?

I have a couple of (killer) recipes that call for graham cracker crusts, but in my experience graham crackers are difficult to find and pricy when they can be had, even here at Lake Chapala. I have tasted crusts that start with Maria’s Galletas before and it’s acceptable as a substitute and easy to find and also inexpensive.

Who among my good MexConnect Cocina friends has that recipe? I was going to use my basic graham cracker crust recipe and just substitute the same amount of Maria’s crushed, but those cookies taste significantly sweeter to me than graham crackers…and more sort of vanilla-ish, or something. (???)

It’s for Cheesecakes and Lime Pies, etc.

Best recipe is to forget the Marias and use Nabisco ”Hony [sic] Bran” as a substitute for graham crackers. Just crush them and substitute them for graham cracker crumbs in your basic recipe – the taste and texture will be much closer to graham crackers than Marias would be.

Sorry, Tashby, I forgot to post this here for you. IMHO for cheesecakes and Key Lime pie, you might want to leave out the cinnamon.

Interesting that you have Nabisco “Honey Bran” available where you are Maesonna, but then I see where you live based on your profile and I suppose it makes sense. That Nabisco product is only available in the Lake Chapala area “sometimes”, most often around Christmas, and only from our “specialty” store with lots of imported-from-US products at an insane price. I have in the past paid the price and you’re right, they work perfectly well for a graham cracker crust.

But I’ve tasted a satisfactory (I thought) crust made from Maria’s, and consider it at least a usable alternative when I can’t find, or don’t feel like paying, for graham crackers, so I want to give a Maria’s crust a try.

P.S. Thanks for the recipe, esperanza. I agree about skipping the canela.

Aw, too bad. The “Hony Bran” (yes, that’s how they are spelled– it just gets me every time I look at it) cookies are available here in DF in supermarkets permanently, so I didn’t realize they’re apparently just a big-city thing. They really are almost like graham crackers.

You can make crumb crust from Saladitas (saltines), if you need to. I saw a professional baker’s recipe, once, for Frozen Margarita Pie, that used a pretzel crumb crust.

Here’s a substitute preformed graham cracker pie crust recipe using Maria cookies:

1 1/2 cups well crushed Maria cookies
1/3 cup sugar (you can adjust to your own tastes)
90g butter

Warm oven to 350º. Mix ingredients well. Mold mixture to a pie pan to form crust. Bake for 8 minutes.

Here is a recipe for a really easy lime pie that my daughter makes.

1/2 cup squeezed lime juice
(1) 14 oz can Carnation evaporated milk
(1) 14 oz can La Lechera (again, you can adjust this for your tastes, as La Lechera is really sweet stuff)
Marias cookies

Mix the liquids together. In a pan, put down a layer of whole Maria cookies, then cover with a layer of the liquid mixture. Put down another layer of Maria cookies, and cover with the mixture. Continue until ingredients are finished. Refrigerate for 1 hour and serve. Keep refrigerated until eaten..

Thanks, GringoCArlos. That second recipe is EXACTLY like a woman from Nayarit who is famous for that pie (though I haven’t tried/made it yet).

I know that second recipe, too – my sisters-in-law make it. They call it dulce de limón – I wonder if it’s generally known by that name.

I also wanted to make a cheesecake for Valentine’s Day! It turned out perfectly.. I was especially happy with the cookie crumb crust. This recipe was made for high altitude bakers (Im in DF)
