Date And Pecan Pie

Ingredients:

Crust

  • 18 “maria” cookies (can be found in the specialty foods section of your supermarket or local hispanic market. Vanilla wafers may be substituted.)
  • 1/2 stick butte or margarine, melted
  • a bit of milk

Filling

  • 1 C. chopped pcans
  • 1 C. chopped dates
  • 5 eggs
  • 1 can of sweetened condensed milk (397 grs.)
  • 1 tsp. vainilla

Preparation:

Grind the cookies to fine crumbs and combine with the butter and a bit of milk so that the cookies bind together.

Cover the bottom and sides of an 8″ springform pan or 9″ pie pan with the cookie mixture. Place the chopped dates on the bottom and sides of the pan, do the same with the chopped pecans.

In a blender, beat together the eggs, vainilla and leche nestle. Pour this mixture into the pie pan.

Bake the pie in a preheated 325 F oven for approximately 40 minutes. Allow to cool for an additional 30 minutes inside the oven.

Decorate the pie with a gold bow, bells and red and green ribbon. This makes a wonderful christmas gift.
