Mexican chia seed drink: Agua de chia by Karen Hursh Graber © 2003

Made with lime juice and sweetened with sugar, agua de chia, or Mexican chia seed drink is especially popular during Mexico's hot spring season. The seeds absorb and hold liquids, thereby helping to prevent dehydration, and the drink is delicious as well as nutritous.


  • 1 cup chia seeds
  • 2 quarts water
  • 1 cup sugar
  • ½ cup fresh lime juice, or to taste

Soak chia seeds in water to cover until they soften and take on a spongy consistency. Sweeten the water with the sugar, stirring to dissolve, and add the chia seeds and lime juice.
Serve cold. Makes 2 quarts.
