Pulque, an ancient Mexican fermented drink derived from the maguey, is quite viscous, which is caused by the byproducts of the sugar digestion process of one of the bacteria naturally present in aguamiel. Don Jose told us that there are a number of maguey species and that each one produces a pulque of a different flavor and consistency.
