Crescents of red onion ae marinated in lemon juice with a pinch of oregano. Another option is to add orange juice and habanero chile to create an ixnipic sauce, typical of Southern Mexico. Either one is a great garnish for tortas ahogadas de camaron — shrimp sandwiches drenched in a chipotle cream sauce.
