Oaxaca, The Spirit of Mexico

A delicious breakfast is created in the shape of a swallow (golondrina), with a tortilla beak, eggs for eyes,
and avocados and papayas for the feathers and tail.
Covered in a savory mild red chile sauce or refried beans, it is a visual and gustatory delight.
