While we were in Michoacan recently, we discovered the pleasures of
Sopa Tarasca. Wonderful stuff! I'm sure it's like Texas chili --everyone has a personal favorite recipe. Will you share it? I couldn't quite figure out all the seasonings and the relative proportions. Sure will appreciate your help. A nice bowlful will help to warm a Montana winter.

JR: Thanks for the recipes; really looks good. One thing, though. We thought we tasted some cinnamon or cloves -- some "sweet"spice in the varieties we liked best. That from Rincon de Josefa in Patzcuaro was superb.

Variations on Sopa Tarasca

Sopa Tarasca is one of those dishes in which each cook adds his or her own touch, and in which that touch may vary with what's on hand. Some versions have a touch of spices, others have a smoky undertone, and some are heavier on the tomato. I've even had some flavored with a touch of bacon. There just isn't any hard-and-fast rule -except for the beans, tortillas, cheese and chiles. And when I make it, I leave out the cheese.

But....why don't you post something about your impressions of the accomodations and food at the Rincon de Josefa over at the Michoacan Forum?

Add some tomatoes, onion and garlic to a basic vegetable, chicken or beef broth. Or even bean broth. Add beans (there’s often great debate over whether the beans ought to be pureed or left whole). Fry pieces of stale tortillas until crisp (or cheat and simply heat them in the oven until dry). Add the tortillas, some cheese, and a chile to the soup, garnishing it with a slice of avocado. It’s essentially a soup made out of leftovers.

BTW, sopa Tarasca is nothing more than sopa tortilla to which beans have been added. But the recipe's at the link below.

I am from Michoacan, in Mexico, and tarasco is the indigenous name of people from Michoacan, or Purepechas. The tarasco soup has no beans, not all of mexican food has beans. The main flavor come from soft and delicate pasilla chile.
