I use a Chinese steamer that I bought in an asian market. It is aluminum and has a base for the boiling water and stackable racks with a lid. I have stacked as many as three racks with 15 tamales total. It's also great for Dim Sum and steamed fresh fish. Most asian markets will also have the traditional bamboo steamer baskets that you just place on top of a pot or wok.
