i love 'em! I used to buy them from a tamale vendor who sold them from a truck he slowly drove around the neighborhhood of Colonia Juarez, TJ, where i had an apartment last year. Yum!

To save time I'm doing a copy and paste but this is one which is closest to my wifes recipe;

Pineapple tamales;

15 - 20 large cornhusks, soaked, cleaned and dried
1 c. fresh minced pinapple or canned crushed pineapple
½ c. pineapple juice
1 ½ c. normal salted butter
4 c. corn harina flour (harina para tamales)
3 t. baking powder
2 c. warm water
½ c. brown sugar

Beat butter until fluffy. Mix in corn harina flour, baking powder, and water. Mix in ½ c. pineapple juice until dough is spongy. Add 1 c. pineapple and ½ c. brown sugar.

Place dough into center of husk. Fold in ends, tie in the center with a string or corn husk strip and store under a damp towel until ready to steam.

To steam, place in a deep pot with hot water filled to the base of a rack. Stand tamales upright loosely so steam can circulate. Bring to a boil, and cover for about 1 -1 1/2 hours. Add hot water to pot when needed.
