The good stuff you get in Mexico requires a vertical rotisserie which most of us just don't have! But the flavor comes from a combination of abodabo seasonings and orange juice in which the thin slices of pork are marinated. You can probably improvise on your home grill.

WOW! I spelled that wrong. The spices you need are "adobado" and are avaible in most large US supermarkets, especially those with an ethnic foods section. ¡Buena suerte!

Hi Carron,
Would you please share your recipe for abodabo seasonings and orange juice? How much juice do you use?
I have had tacos el (or al?) pastor and really enjoyed them. Don't they usually put a big chunk of pineapple on top of the meat stack?
Thanks
DTM
