Does anyone have a simple recipe for pancita de rez (spicy beef tripe soup)? I just bought 3 pounds of tripe at Wal-Mart and I want to prepare it the way I used to eat it in Mexico City.

Tiene alguien una receta sencilla para pancita de rez (en caldillo picoso)? Acabo de comprar 1.5 kilos en Wal-Mart y quiero preparalo asi como lo solia comer en Mexico.

From my experience, Menudo can be without corn too. And Mole De Panza definitely don't have corn in it. Mole De Panza seem to be a very common name for what you are looking for, at least here in Puebla, Mexico.

Thanks for the private responses. Let me clarify, though, menudo is not what I'm looking for, I've found several recipes for that and it's not the same as pancita, menudo has corn like pozole (which I also adore) and calf or pig feet, but pancita is just tripe with broth. For some reason I can't find any recipes online for pancita, which is a very common dish in Mexico City (I couldn't tell you where it originates). Thanks again.
