Hi Everyone,

We will be moving to Ajijic in July, from...the Jersey shore! That is sea level to 5000 feet. Can anyone give me tips on high altitude adjustments. I specifically need time and temp. Changes to get the same results. I was there for Xmas and was thankful for a neighbor's advice as I was baking a fruit tart and she told me to cook the fruit a bit first or it would never be done the same time as the crust. The guests were not disappointed so it worked. Thanks

Thanks for the address. I will certainly e-mail.
I have also already had most of the shots you told me about. We are fortunate the school system we work for will give them as part of the health plan.

Well, I'm at an altitude much higher than Ajijic, and I never bake the fruit first. And it works out just fine. Some of the adjustments will depend upon whether you're using a regular gas oven or an electric convection oven.

If you do a google search on "high altitude baking," you'll find a goldmine of information.
