We have discussed half and half cream or the lack of it on this forum before. I returned after a 7 month stay in US and find half and half cream available. It is thicker than US half and half but says half and half on the carton..even in English. I don't know if the new Mega in SMA has brought it or if it is just now available. Also, exactly what is crema entero..in a little box..unpourable because it is so thick?? Some of the natives here are trying to corn beef but lack a source for nitrates and salt peter...Any leads where to get this and what is it called?

And while we are on the subject, what brand of crema is the more liquid kind. Most of what I find in the stores in crema acida and thick but I know there is a runnier crema - I'm failing to find it but prefer it to the thick crema acida.

More liquid crema? Maybe you mean the regular crema that's sold in bottles and jars in Mexican grocery stores and in covered plastic cups at dairy stands at any tianguis. I prefer what I buy at the tianguis. These cremas are more liquid when they're at room temperature but become a bit more solid--more like the consistency of mayonnaise--when refrigerated.

Eugenia makes a decent brand, if you want to buy your crema in bottles. The Eugenia brand crema comes in a little bottle that looks almost like the cream bottles of yore from the USA.

The crema acida you're seeing is also called crema agria and more resembles sour cream.

Thanks Esperanza - I'll hit the tianguis but also look for Eugenia. I keep things like this in the frig and was failing to recognize that they get thicker in the cold.

Cynthia, I forgot that I was going to post something about salt peter. Look up the definition of the dreaded salitre--it's your buddy salt peter!
