Verdolagas

Sounds like an embarassing "social" disease, but in reality, they are a type of greens.

I bought some in the Pátzcuaro Mercado, and got cooking suggestions from the vendor and her amiga next door, the Toy Seller. "Cook with chicken or pork. Or just steam, and serve with butter."

Any experienced verdolagas cooks out there with some more verdolagian tips? I hope that they are not like romeritos, which I generally detest.

Verdolagas are purslane, a weed. Verdolgas are best dumped in the compost pile or put down the disposal.

Most frequently verdolagas are added to pork stew. Or sauteed in olive oil with a little tomato and onion. In any event, they should be viewed as punishment food.

Anything as nutricious as purslane couldn't be good for you. Stick with mustard, turnip and collards !!

Whatever you do, DO NOT turn those verdulagas loose in your garden or compost heap! To say that they are invasive is a GROSS understatement, and yes, if your heap reaches incendiary tempertures, they MAY be discouraged, but trust me, the threat outweighs any possible flavor reward!
Maybe find a local vendor who includes them in his comida and get your gustatory blast there?

Verdolagas are available in the quantity you need in any market or grocery store produce section. There's no reason to plant this weed in order to be able to prepare some in a stew or as a vegetable.

One of the most common preparations of verdolagas is as espinazo con verdolagas. There's a recipe for this stew, made of pork neck bones, chiles, and verdolagas, in Regional Mexican Cooking, one of Diana Kennedy's cookbooks. Look on pages 53-54.

Caveat: verdolagas are the most acidic green vegetable I've ever tasted. Talk about puckering up your mouth...

Yes, and fairly slimy, too, if overcooked.
I won't be buying those again.
