Vegetable "chicharrón" with salady stuff on top

I've seen a sort of dark tan or light brown rectangular "cracker", about 4"x6", maybe larger, that apparently when fried, puffs up like piggy chicharrón. I've also seen people walking about eating one of these fried "crackers" with a sort of coarsely chopped salad of what appears to be diced tomatoes, onions, possibly chiles. Are meat or chicken commonly served on these?
(This is in Pátzcuaro, and I think I've seen them elsewhere.)

Finally, what are the "crackers" called, and what's the name of the snack?

They look good, and I want to try it.

Those things are called 'duritos'. You can get them in various shapes: the rectangles you mention, wheels, long sticks, etc. They're made of wheat flour and, as you said, puff up when fried.

You can put anything on top of them. You might be seeing onions, but what you think are onions (if they're long-ish) may well be cueritos (pickled pig skin), served with chopped onion, tomatoes, and chile.

In the Mazatlan area the 4" x 6" rectangular chicharrón type deep fried cracker sheets are called duros and are sometimes eaten with ceviche in homes but more often with hot sauce and a squeeze of lime by children, are not really considered to be adult food and are never seen sold as street food. Probably some Chilango invento from years ago.
