I found a place selling nice, soft juicy vainas de vainilla in the market in San Cris. I bought 2 @ $25p each and will go back and get more if I can easily store them. I've had bad luck keeping them moist over time before and I'm wondering if I can freeze them? Anyone tried this? How about keeping them in the refrigerator sealed in plastic for a little longer shelf life? It's cool here but dry, they did not have them refrigerated where I bought them but did have them well sealed in plastic. Once I go back down to the coast, the humidity will pick up but so will the heat. All suggestions for storing vanilla beans are welcome. Using them too, I'm always open for new things to do with vanilla, it's one of my favorite tastes. Currently I plan to put some in some good vodka to make a vanilla flavoring, put some pieces in with my Peets coffee beans and perhaps make some ice cream with some when I get back to Akumal and my ice cream maker.
