Is there any way to tame the heat from peppers in a tomato dish already made without diluting or otherwise altering the flavor? I've read that milk and milk products can cool the fire in the mouth, can it be quelled (slightly) in the pot?

Either that or just get used to it! The hotter the food, the happier you will feel!

Here are a couple of suggestions. (1) Pour the tomato dish over a pile of very bland white rice. (2) Add a couple of cut up potatoes and boil down until the potato is done. (3) Serve with lots of warm corn tortillas and put a very small amount of the stew onto each. (4) Eat it like it is and benefit from the endorphins which go direct from the peppers to your brain and are reputed to make you feel very good. (5) Toss a little of the tomato dish over a pound of pasta and serve as a dry soup. (6) Break it down into several small portions and reserve for future use as a seasoning for soup or a salsa. A tomato based stew should freeze quite well.
