Strange Christmas Dish-Romeritos

Our lovely neighbor has given us some home made romeritos. I'd had this traditional Christmas dish twice, elsewhere, and heartily disliked it.

This one is strangely tasty: the romeritos greens have been cooked with potato chunks, flavored with camarones en polvo, with their faint taste of iodine, and simmered in a rich, dark mole. It does NOT have those nasty, greasy, smelly little tortitas de camarón on it.
This may well be the oddest combination of ingredients I've ever tasted, but it is appealing and growing on me even as I eat it. I think the secret touch is the mole.
By the way, we are having it atop plain, steamed rice.

was this the same neighbor that had the wedding fiesta? I'll have to do a search on the romeritos. Not sure I know of it.

Romeritos con mole, my favorite dish! Sadly, most cooks seem to gild them with either tortas de camaron or dried shrimp, which means that I can't eat any. I consider it a very lucky day when I can find romeritos prepared with mole, perhaps a few papas cambray, and no evidence of shrimp. (I'm deathly allergic to shrimp.)

This dish is usually not served atop rice. It's a dish which can stand alone or as part of a holiday repast.

Romeritos also are part of Mexico's Lenten cuisine.

HAndy Rolly, always there in a pinch when we need some info. I looked it up and found the rosemary related info. Sounds yummy. I like rosemary.

Yes, Rolly, but as the link describes, there's no relation between las verduras romeritos and romero, the sharp, piney herb.

Neat recipe. Is nopales what you ate too? I am going to try this recipe, or better yet, see if my SIL here can make it as I don't like to experiment when I am feeding a family of 10. Cereal anyone?
