We've gotten into the habit of eating at a local cocina economica. It's generally very good, and almost criminally inexpensive. There is no menu, whatever is on offer is communicated verbally. And the television, or musica is usually turned on. Loud. In other words, half the time we're not sure what we're ordering. Today I had something that was very close to a simple chile relleno, but with no poblano chile or any other kind for that matter. I heard her say Oaxaca, so I'm guessing that was the type of cheese inside. Basically, it was an egg-battered, fried dish, but instead of a chile, it appeared to be sliced squash that surrounded the cheese. It sounded like the word she called it started with an "s". Any guesses?
