Thanks Mike. I've seen this one in English. The "corazón de palmito" hearts of palm seems a little odd. And it seems like a lot of tomatoes.

My husband makes a shrimp mixture similar to the previous recipe, except no heart of palm. He uses tomatillos instead of tomatoes and cooks the sauce down prior to adding the shrimp and a tablespoon of crema. Sorry, no exact measurements - he doesn't cook that way. Pam

What I'd do is cut back, or even leave out the tomatoes. I'd be sure to have some fresh garlic, finely minced onion, and some medium-picante chile. Maybe a squirt of lime juice? Salt, to be sure.
Be sure to let the filling cool thoroughly before filling the empanadas.
I imagine that the addition of cooked, cooled rice not only acts as a cheap "filler", but may absorb excess juices, so the the empanadas don't come out soggy.
The corazon de palmito thing is a bit of excess on the part of the recipe writer. I might use some sauteed pimientos piquillos in the fillling. Or, maybe not.

Aside; there's a bag of Whiskas™, "Receta de Mariscos" cat food here on the shelf. The front of the bag says, "Con empanaditas rellenas", also known as savory nuggets.
