The recipe that you linked to is the Spanish (Spain) version of the Rosca de Reyes, and it is not usually found in México in Día de Reyes. The Mexican version, both in the coastal (Veracruz) and Central (México City) regions, perfumes the dough with orange blossom water (agua de azahar, doesn't have cinammon, and uses at two egg yolks per egg: commonly 8 egg yolks and 4 eggs for a 7 cup of flour recipe. Another must for the rosca is the use of crystalized (candied) fruit for decorating, the Veracruz version also mixes pieces of this candy into the dough. And probably the most important part of the Rosca, even more than the bread, is the porcelain or plastic baby Jesus which is hidden inside the bread. Whoever gets the lucky piece has to reciprocate with a big feast on Feb 2o for the presentation of the Baby to the Temple (Día de la Candelaria), traditionally you have tamales that day.
