Rick Bayless is well known, in the Chicago area at least, for his authentic Mexican food. He travels to areas new to him to learn that region's cuisine on a yearly basis. This article appeared in the May 2 edition of the Chicago Tribune.

Many PBS stations in the USA carry his cooking show. I was in Albuquerque recently and was able to catch an hour of his show. Subject of that particular run was cooking with achiote. He actually showed the annatto tree and the seed pods and how the seeds looked before milling into achiote. The dishes he prepared looked wonderful.

The Chicago Tribune site requires registration before you can access the article in the link. It's free but they ask a bunch of needless questions. The article is good, perhaps worth the registration.

I can attest to the fact that Rick Bayless is, indeed, a remarkable teacher. The current season of his PBS show - Mexico, One Plate at a Time - is featuring the state of Veracruz.
