After years of anticipation, we were fortunate yesterday to at last be able to dine at Restaurante "El Bajío", on the Avenida Cuitláhuac, Col. Obrero Popular, somewhat away from the center of Mexico City.

For the most part, we were not disappointed. If anything, we are motivated to return soon for breakfast (the restaurant is not open at night.) and try some of the other regional specialties.
The cuisine is traditional, but with deep roots, and often of great complexity of seasoning, due to the efforts of the owner, "Doña Titita" in finding and preserving the traditional recipes of her home region of Xalapa and environs.

Well, UJ, I didn't actually have the enchiladas, but I did taste the sauce and the accompanying black bean mash. The mole was very complex with multiple layers of spice tastes; slightly sweet, but not excessively. It's probably one of the tastiest moles I've ever tried, but, as I may have mentioned, I'm not a big mole fan, so I didn't order it. The enchiladas looked nicely packed with chicken, and as you can see by the picture, they were very nicely presented.

The "tamal", whose real name is something else, consists of a tangy crab filling wrapped in multiple tortillas, then in a banana leaf. I don't know how they get the striped effect or what that is, exactly. But it was good.)

I love it when you post these pics. Those foods look a lot like the way my sil cooks, here (tasty!). Her tamal is different, but I had another sil who made them like that you pictured. Hope I get to try it again someday.
