In Mexico I have aquired a taste for a dish called "Mole de Panza" a souplike dish which is made from cow's stomach. As we and you know, it's very popular in Mexico and perhaps in other countries. We normally live in the USA and I'm not familiar with it there, at least not among the American people. Nor am I familiar with this dish from Sweden (my native country) either.
In respect to American people:
1. Is this dish (or similar) consumed?
2. Does the American people consume the cow's stomach in any fashion?
3. We are considering serving this in a club in the USA. Would it go over?

Many Mexicans make a heavy soup with tripe called Menudo. It is usually served on the week-ends. Try:

If what you're looking for truly is menudo....
Properly made, it's excellent. As far as serving it in a restourant in the States, that,I would think, would pretty much depend on where you're located.Good luck!
