I am astounded that there are those who would compare Mexican food with the extraordinarily complex and delicious foods of Thailand, VietNam, India, Pakistan, Iran, Algeria, Tunisia, Egypt , Ethiopia, Morocco, China (in many regions) and on and on. This country cannot hope to deserve a place at the table in any of these places. The hope among Mexicans that they could become a UN designated unique cuisine because of its corn base is laughable. Hell, we do better things with corn in Alabama. Don't be shining me on.

(Note This post is meant for those who know that UNICEF turned down Mexico's request to designate its cuisine as unique and that's all I have to say about that.)

UNESCO, Bubba. I heard that on the news (radio 97.9 FM) about a month ago. And the request wasn't to designate Mexico's cuisine as unique. The application was for a UNESCO designation as a Patrimonio de Humanidad. The application wasn't as much about the haute cuisine-ness of Mexican food as it was about the tracking of Mexican cuisines and their development from pre-history to the present through the corn kitchen.

Until you've eaten the real cuisines of Mexico--not what's served in 99.9% of the restaurants specializing in Mexican food all over this country and NOB--you haven't even tried Mexican food. A chicken enchilada combo ain't it. Neither is Doña María's mole from a jar.

Yes, there is food in Mexico that is as complexly deep, flavored and textured and as wonderful as all the cuisines Bubba mentioned. It's just not normally served in restaurants. There are a few, however:

Aguila y Sol (Mexico City)
Izote de Patricia Quintana (Mexico City)
El Tajín de Alicia Gironella d'Angelis (Mexico City)
Azul y Oro de Ricardo Muñoz (Mexico City)
Hacienda los Morales (Mexico City)

There is no world-class restaurant of any kind in Guadalajara, including Mexican.

In order to get acquainted with the true cuisines of Mexico, you have to eat in private homes where the ama de casa is a world class cook.

OK, UNESCO Godammit!!!!

Bubba will be eating in these restaurants recommended by Esperanza. He also concedes that there is wonderful food in Mexico but concurs that there are no "world class" restaurants in El Rancho Grande (Guadalajara) except, of course, Burger King . Guadalajara reminds me of the Los Angeles of the 1960s. Theme above food.

Bubba understands that there is a new Japanese restaurant of note in El Rancho Grande. I'll be back to you on that..

What did I do BB(before bubba)life must have been pretty drab. I try not to get my food reviews from people that refer to themselves in the third person. Esperanza you have a knack for setting the Bbuba Man straight without ruffling his feathers.......fly on free bird. d
