And an easy one to do in Mexico (except for the Slap ya Mama Cajun Spice) Be creative.

Tonight: I start with one slice of bacon, a little garlic, onion, tomato, ginger...chop up into little pieces. Add some "Slap Ya Mama" cajun spice...sautee..add twp tbsp of crunchy peanut butter, when done, add chicken stock, then fresh cabbage and finish with a little sour cream. Sort of a Thaisy cabbage dish.

Are you in Mexico "one slice of bacon" or in the States "one slice of bacon"

The recipe sounds fabulous. It's difficult to ignore, but Slap ya Mama has been around since the mid-50's and is mostly ground black pepper, dried red peppers, garlic and salt. Using the above ingredients, instead of dried, red peppers, try a fresh, red, serrano pepper for Palmada tu Mamasita.
(As Julia Child would have said, if she had gone to Mexico instead of France.....)

Yea, sliced bacon clarification:

I'm in Louisiana which is a lot like Mexico but I'm using a medium thickness piece of bacon. Not as thin as market bacon and not as thick as that good USA maple bacon.

When living in Mazatlan, I found it VERY difficult to get thick sliced lean bacon. The photo you show looks very good but very rare in Mexico from my experience. You must have found a good butcher shop. Or is the bacon from the USA?

Oh my! Those of us Lakeside are so fortunate to have Tony's Meat Market. Their slab bacon is as lean as that in the photo and they'll slice it anythickness you want. I've not had bacon that lean and good since I was a youngster. My grandfather raised hogs and he smoked his own bacon and hams.

It's not hard to find this kind of bacon, I'm from Mexico and that's a mexican bacon. ;)

Yu can find it at supermarkets like Wal-Mart, best are Bafar, Sabori, San Rafael.

I buy marvelous bacon at the weekly tianguis in my neighborhood. Don Raúl, the butcher there, cuts it to exactly the thickness I want: thicker than pictured in the OP's photo, but not too thick for my tastes.

As a favor to me, he also took all of my 40-year-old Sabatier carbon steel knives to the knife sharpener place where he takes HIS knives, and he loaned me two or three of his knives while mine were being sharpened. My knives came back like razors.

Except for lousy American bacon, the lean and meaty Mexican bacon is all I see in many years here. We always buy it sliced to our requested thickness from the slab. And the smaller the slab i.e. from a smaller hog, you get leaner bacon.
