Nopales and their pectin

We are going to pick nopales with some amigas later this afternoon. I'm aware of several ways to prepare and cook the nopalitos (and have seen several interesting recipes on Mexconnect.
I also learned that they are pectin rich. Now, just for the heck of it, I'm wondering how I might use them in making mermelada de naranja agria.
