I need to know the name of a cheese that is made in Oaxaca. They sell it at Oaxacan food road stands and groceries in Mexico City. It is white, and it comes in long strings. You can peel little pieces from the long string. All anyone ever called it was "Oaxacan cheese," but I need something more specific so I can try to find some here in the U.S. Does anyone know a catalog or online company that sells this cheese in the U.S.?

Quesilla is the name of the cheese they sell in Oaxaca. Although some brands sold in the states claim to be 'Oaxaca' cheese, they aren't really the same.
If your in Los Angeles or Petaluma Calif. I know where you can get it (and other things from Oaxaca like tclyudas) but it's expensive because of the cost to bring it here.
Otherwise you have to go there! (Food is definitely a great excuse to visit Oaxaca!)
Friends from Oaxaca just buy Mozzarela, but it ain't the same.. I know why you miss it! (Also the chorizo, pan azucar, chile de agual, etc...)

The name of the cheese is Queso Oaxaca or Queso Asadero which is the same, it is really good for quesadillas or "queso flameado", and you probably find it on a Latin American food stores or try one of the sites on the Internet

The name of the cheese is that : Oaxaca Cheese or
'Queso Oaxaca' in Spanish.

When I was in California a year ago (Temecula),
I had found a very good Brand named 'Cacique',
They have several Mexican Style Cheeses and I
maded a super-super Quesadillas with the 'Ranchero'
Cheese and the Tortillas of the 'Temecula Tortilleria'
Even better than the Tortilla that I can found in
Mexico (the 'Industrial Thing' of course).

So try the 'Cacique' Brand or check the 'mexgrocer.com'
and Excuse my very basic level of English.

I'm in the suburbs of Chicago. Latin American food sources in abundance here!

Yes, that's Queso Oaxaca. Cacique and V&V are brands readily available in our Jewel Food Stores, Dominicks and Del Ray Farms. They offer a wide variety of cremas, quesos, chorizo, etc.
