I recently purchased a Molcajete, and would like to know how to "cure" it. It is new and is still rough. How do I process it so I can begin using it?

Get about a half kilo or so of the cheapest rice you can find. Broken rice is fine for this job. Add a handful of the rice to your molcajete, and grind away. You’ll end up with a grey-ish mix. Throw it away, add another handful of rice, and repeat the process over and over again until your grinding results in a clean mix of ground up rice. Dried corn can also be used for this chore, but I think rice gives better results.

Now, rinse out the molcajete. Put it in a 350 F. oven for about 10 minutes, removing when it’s cooled down.

Your molcajete should now be ready to use.
