Ingredients:
200 gram of large pasta, very thin and of good cuality
4 eggs
4 chiles jalapeños in vinegar
4 big and red tomatoes
3 big avocados
2 onions
250 gram of string bean
2 laurel leaves
oil, vinegar, salt and pepper

In a recipent with boiling water cook the pasta with a half of an onion, salt, the laurel and a spoon of oil. Once it's cooked, wash it on cold water and drip it very well.
Cook the eggs and separate the yolks. Mix the yolks with oil until you have made a sauce with them.
Mix very carefully the sauce and the pasta, cut the chiles and add to the pasta, with a little vinegar, salt and pepper. Put the pasta on a plate making a circle, in the middle put an slices of tomato. Cut the avocados in slices and cover them with oil, decorate the circle of pasta with them. Around the circle put slices of tomatoes, add vinegar, salt and pepper.
To finish the dish, boil the string beans with salt and a bit of onion until they are cooked. Drip them and cut in small pieces and add salt, vinegar and pepper. Decorate with the string beans the center of your plate. Finish the decorate with slices of onion.

What do I soak veg. & fruit in?

Hi,

I plan on spending about 3 months in Mexico next winter and plan on cooking while I'm there. I heard that I should always soak veg. & fruit in (something???) so that I don't get sick. I can't remember what it was. Do you know?
