It depends on where you are. In Colombia, melado is like a marmalade or syrup. In Spain, it's a meringue. In Mexico, it's a word not used very much.

I just saw it in Soriana. It is darker than normal syrup. Does it have a special flavor or use?

I've always thought that in Mexico "molasses" was "melaza".
