I see this product on the supermarket shelf and wonder just what is it and what is the the "fresh" equal. Thanks.

I'm not exactly sure, but I'd say that the fresh equivalent is "crema". Crema seems to differ greatly in thickness, ranging from a thick but pourable liquid resembling yoghurt in consistency, to an almost soft, cheese-like consistency. We bought some recently at la Fábrica de Quesos, on Ave. Saltillo, in Pátzcuaro; across from Tienda Don Chucho's that was thick and rich.

Some crema is sold out of pails in tiendas and mercado stalls and dipped out on order. Some is very good, others less so. Some crema has vegetable oil as one of its ingredients.

Some crema has a more "matured" taste and a slightly yellow color, which to me is desireable.

I hope others can add to this.
