Meat and milk

I go often to stay with friends in a small zapotec farming village in the Oaxaca Valley, so food in 'el campo' is my experiance. The meat, produce, and milk are delicious and fresh. Meat is freshly butchered from animals that have been fed maize, hay, herbs, and grazed in the countryside. The meat in Mexico is leaner and has much more flavor. The vegatables and fruit are fresh and ripened on the vine or tree. Herbs are wonderful. Even flowers sold in the mercados have scent, including the roses. Try finding a rose in a U.S. florist shop that smells like a rose! I would by milk for my coffee from a gentlemen who sold it every morning fresh from his cow. Of course the milk was not pasturized, but neither I didn't anyone getting ill from it. Also a difference is that the milk hadn't had the cream removed. Muy rico! Regarding the dreaded 'turista'... I use the pepto bismol preventive measure and have not had a problem at all. What you do is start the day before you leave for Mexico and take 4 PB tablets (or tsp. of the liquid) every 4 hours. Just continue this for a couple of weeks while you're there and then start tapering off of it. By that time your body should have had a chance to acclimate itself to the new 'ecosystem'. My advice: Enjoy and don't worry!
