OK Turkey Eggs, . . . . I always stop at the entrance to our local Commercial Mexicana and usually buy something, even if I really do not need it, from an 86 year old Mexican woman with a really bad case of a deformed spine from some medical problem. She is a really sweet old woman who lives in the next pueblo up from us and takes the 45 minute bus ride every day (rain or shine) at around 8:00 Am and returns home at around 4:0,0 Pm unless she has sold out of her daily goods before then. I really admire that old woman. She sells everything from picked flowers from her garden to radishes, to tortillas to Turkey Eggs! What Turkey Eggs? Yes Turkey Eggs! Ok so I bought these turkey eggs (10 of them) and took them back to the car much to my wife's chagrin!

Then I started wondering what one would use Turkey Eggs for? What do they taste like? Are they good for baking? They sat in the fridge for a few days and then I started seeing them disappear usually two at a time. I asked my wife where she was using them? She said she wasn't but that her mother was feeding them to her bedridden husband. He is still alive and kickin', so I guess they are not that bad for you . . . . but can some of you folks out there enlighten me a little about Turkey Eggs? Has anyone out there actually eaten them? They are really good size speckled eggs. That's all I know about them!

I used to buy Turkey Eggs years ago in the farmers market when I lived in Canada. The only difference that I recall is that you only need one egg for breakfast instead of two. I have not seen any here in Mexico, the farmers must keep them all for themselves. lol

In fact, people who raise turkeys usually do keep them for themselves...but not to eat. Turkey hens lay less and far less often than chickens, and all the eggs are needed for raising more birds.

I do see a lot of duck and quail eggs at all markets. Quail eggs are even for sale at the supermarket I go to about once a month. I bought some last week to prepare as deviled eggs for a party--tiny one-bite deviled egg halves.

OK, so I found out the difference in the taste of turkey eggs versus chicken eggs. There is no difference in the taste between the two different eggs really, none that I could discern anyway. One day last week when I was busy with another task about the house, my wife and mother-in-law decided to test out this question on yours truly. Everything was cooked exactly as I would normally eat my morning eggs, with some of the normal pan fried potatoes along side, two NOB style "Old Folks" sausage patties and a bollio cut in half and pan toasted. The eggs may have been a little larger, but since everything else was just as normal, or so I thought. A few days later a discussion around the table was going on and somehow we got around to those turkey eggs again. Then the laughter started between my wife and other-in-law. They confessed! . . . . . . they had sabotaged my breakfast one day the prior week and I never new a thing was out of place, so they must have been good, as the plate was empty and clean before it hit the kitchen sink! So there you go folks . . . . . . . . . maybe a little bigger, I do not recall, but other than that possibility, no difference at all. Taste test complete! (smiling)
