Large Tortilla steamer?

Why would a tortilla steamer be so large (5-6 gals)(Galvanized) and so much capacity above the steam (over 3/4's of the container). I've seen other smaller ones but this looks to be industrial capacity.

Personalmente yo probaria con lo siguinte : ponga las tortillas en una bolsa de freezer en la microhonda pra un minuto y media pero pongalas en medo de taollita de papel para absorber la humedad

I've never heard of a steamer for tortillas, did you mean to type tamales instead of tortillas?

I'll look at the label again (this is a new item in local store)(this one looks like it should be in your back yard with a fire under it) ... but yes they do have small steamers that probably work like a steam iron. They are electric and could be on the dinner table. They would warm and soften tortillas that are a little old or out of the fridge.
