Jicama salad w/roasted pepper sauce

While in Yucatan last year we had a raw jicama, carrot, and celery salad, topped with a roasted red sweet pepper dressing of some sort. It was great. Does anyone know how to make a light dressing of this kind? My guess: roasted red pepper blended with either olive oil,maybe some balsamic vinegar and...?
