How do YOU do calabazas rellenas?

Had a craving for calabazas rellenas and have seen two (pretty similar) recipes on them recently.

I am pondering if I should use a grill pan I have (similar to the second link) , OR could I just roast the calabazas in the oven? I was also thinking of doing a batch of roast garlic and bell peppers, so might as well save gas by doing it all at once, right?

Anyone have a preference? I havent ever roasted squash for this purpose, so Im not sure how long it would take (dont want to overcook them, mushy squash is blegh!)

Delicious! The first recipe my MIL does often, and added Oaxca cheese at the end.

The second thatyou mentioned looks wonderfully yummy, wish my husband could eat more fried foods! Maybe one day, yumyum!

Hello Rolly,

The Spanish word "Calabazas" in México seem to cover anything that is of the squash family from pumpkins, zucchini's to spaghetti squash. Can you or anyone else for that matter tell me if specific or individual kinds of (squashes) calabazas actually have any Spanish names to them?
