I used to have a great recipe for flan that called for a can of condensed milk, eggs, vanilla, and sugar for the caramel. I can't remember the proportions. Does anyone have a recipe that works well? This called for caramelizing the sugar in a microwave, then pouring in the mix, and baking it in the oven (temperature?) for about an hour. The bowl containing the flan was set in a dish of water.

How do you caramelize the sugar in the micro? It seems it would burn. Please tell me more!

Well, the way I used to do it was to combine about 2 teaspoons of water with about 1/4 cup of sugar. It has to be spread evenly in a pyrex dish (I use the dish that I'm going to bake the flan in.) Cook it a couple of minutes at a time on full power. Watch it CAREFULLY. I have the flan mixture ready to add as soon as the sugar turns that nice caramelized brown color, then I pop in in the oven in its water bath. This may require some experimentation with your microwave.

The classic Mexican Flan made with condensed milk and four eggs is the recipe I know. The only difference is that I caramelize my sugar in the microwave - fast, easy, and it works! I couldn't remember - for certain - the proportions of the ingredients. Thank you. Try this recipe - it's easy, it's very rich, and makes a great company dessert.
