Feb 2 groundhog stew

Contry-Style Groundhog
1 groundhog
1/2 c. flour
1/4 tsp. salt
1/4 tsp. pepper
1/4 tsp. soda
1/4 c. cooking oil
1/2 tsp. sugar
NOTE:Clean and skin as soon as possible. Remove all sent glands. Cut off head, feet and tail. Cure in cool place by suspending from hook approximately 4 days. When ready to cook, lard according to recipe.

Dress groundhog as for rabbit, removing the small sacs in the back and under the forearm. Soak groundhog overnight in salted water to remove wild flavor. Combine flour, salt, pepper and sada; rub into groundhog pieces. Brown grounhog in hot oil in skillet; sprinkle with sugar. Reduce heat; add 1/2 cup water. Cover; simmer for about 30 minutes or until tender. Remove cover; cook for 10 minutes longer.

I suppose to make it a Mexican recipe, add jalapenos to taste.

Just run over a possum or sic your Bluetick Hound on that sucker and substitute that for the groundhog. You might also want to substitute bacon grease and salt it up a bit more for a genuine Alabama Redneck feast that can be eaten any day along with some of Uncle Ned's vintage (February, 2006) white lightnin'..

If Cousins Ralph Bob and Norma Rae smell this cooking, you will have uninvited guests.

Bubba, nobody is named Ralph Bob. That would be like Sue Peggy. It can only be Bobby Ralph. Your years in the SF Bay are showing. How about a more elegant name like Barry Lee?

Back in Texas I have a friend named Billy who is married to a nice lady named Billie. Talk about confusion.

Thanks for the recipe. I just happen to have a groundhog hangin' out in the shed. Tonight we'll eat it along with my favorite movie "Groundhog Day." Funniest movie I've seen! We'll call it "Dinner and a Movie."

Just kidding, of course. But I think we will watch the movie cuz I love it! I'm ready for a good laugh.

In Pennsylvania we used beer batter & deep fried them nice & crunchy. Dipped them in 1/2 cup catsup + 1/2 cup horseradish = 1 cup dipping sauce. yum yum. Chocolate layer cake slathered with limberger cheese for dessert. Ummmm Good !!
Getting older and still not down here.

Unfortunately in western Canada we had niether ground hogs nor possums so had to be content with the much tinier (but arguably tastier) prairie gopher. I agree with the use of bacon grease and more salt. But having not seen either the possum or ground hog (or gopher for that matter) since arriving in Mexico I wonder what local animal to use in their place????
