Over in the Yucatan, you can get little packets of escabeche mix in any little store. This is as close as you get to pickles in Mexico, and I like to make a sort of mexican gardinera by boiling the mix with water and a little vinegar, adding sliced carrots, coliflower cloves, chunks of cucumber, a few button mushrooms...then putting in in jars in the fridge for later snacking. Sometimes I also do a jar or two of whole green beans this way (with a dollop of chile) for snacks, snappy cocktail stirrers.
Problem is, over here in Mazatlan, they donīt sell the mix. I know it has bay leaves (laurel) in it, and black pepper or pepper corns. But what else? ANybody got a list of stuff to make my own escabeche mix?

Thanks a lot. And donīt think I donīt feel silly finding the thing I asked about right there in front of me. Now to see if I can get any thyme.

Recipe for jalapenos en escabeche is posted below, dated 1/30/02 (pickled jalapenos). It can be made without the chiles using just the vegetables or a combination of both the chiles and vegetables.
