My kids have been posting themselves on www.youtube.com for a year or so now from web cams and cell phones and they told me I really should look at some of the stuff YouTube offers. I didn't bother for a long time because I figured it was some kind of silly teenage/young adult site. Tried it and fell in love.

I have been amazed to find hours and hours of excellent amateur to very professional videos demonstrating every kind of cooking technique and detailed demonstrations of recipes from all over the world. Much better than reading from a cook book, especially when I don't exactly know how it should be done. I have just prepared a delicious stir fry in my wok, including fried ramen noodles.

There are also many videos showing real pictures of real people making both flour and masa tortillas. I might even work up the courage to try making them one more time. Take a look when you have time. It's like having your own personal chef working alongside you in your kitchen. (But then they never wash the dishes for me!)

Just type in www.youtube.com in the Search Bar of your browser. Then on the YouTube home page select Videos. In the search box for YouTube type in something like Cooking Chinese, Mexican Cooking, Japanese Food,or Making Tortillas, whatever you happen to be interested in, and a long list of matches will show up. Way too many to try to give individual Internet addresses. Click one and see what happens. They are all posted on YouTube so you will not have to leave that site. I have just spent almost an hour watching videos about How to Use Chopsticks.

I'll contribute this link that helped me a lot when I was trying to figure out arroz rojo. My garbage disposal ate pots upon pots of mushy, soggy, tasteless rice before I finally got it right. You can find YouTube recipes in English, but I like this one in part because it shows pretty much the entire cooking process. Plus this budding young cook is funny, even though he does use an awful lot of vegetables in his rice. (And it's a good way to practice your Spanish.) Ahi les va.

Another great resource is the cooking videos on Univision.com. They had a nice recipe for tamales verdes. Now if only I can find it. . . .Apparently Univision updates its cooking videos periodically and removes older links. I can't find the recipe for green tamales, but they still have several other good video recipes.

But, mushy, soggy, tasteless rice is authentic, standard fare around here. Once in a rare while, I've had a nicely cooked rice with distinct grains and still identifiable vegetables. I just had some this afternoon. (However, the barbacoa/birria was tender and virtually boneless.)

Don't get me wrong—I'm appreciative of the kind invitation of my neighbors. Also, I'm talking rice for 200+ guests. It's hard to control the timing of the cooking when serving so many.
