This sounds good and easy for Holiday entertaining. I'm considering doing a variation, using sweetened dried cranberries and fresh orange. Also, I do think I'd seen a Chipotle Raspberry Sauce, ready to use, in Costco in Morelia. Maybe that's intended for meats.

That raspberry chipotle sauce from Costco is addictive. It's good on almost anything--including your finger, just licked off. In addition using it on pork and chicken (it's a wonderful accompaniment) I like it as a condiment on meatloaf, instead of catsup. It would be marvelous on cream cheese.

I consider chipotles to be culinary magic. Added to mayo, catsup, mustard, salsa, jam, jelly, or in almost any sauce, they transform it to a completely new and delicious creation. And I love that in Mexico you can buy them in those handy little cans that contain only a few chipotles - thereby saving you from losing the bulk of an opened larger can in the bowels of your fridge.

I have also found them dried in whatever amount you put in the bag. I keep a bag of those around and slice them in stew or in cornbread, lots of uses. With a bag of sun dried tomatos and a bag of dried chipotles, you can make anything taste good.

I love putting a dry chipotle or two in the frijoles when cooking. Gives them a nice smoky, picante taste. I haven't tried adding them to mayo nor cornbread, that's another good tip. After reading some of the items you guys take to the US as regalos I went out and bought some of the Tarin and the Dona Chonita sauces to take to my son. He loves to cook, especially Mexican food. He makes a mean tortilla, harina and the famous sopapillas that are so popular in NM. My daughter in law laughs saying, "You probably never thought you'd be swapping recipes with your son".

I don't know about up north, but down here you can now get mayonnaise with chipotle added, in squeeze bottles no less.

Years ago, I tried a Chipotle Cornbread recipe, involving some minced chipotles en adobo, cheese, etc. It came out an unappetizing color and the taste was pointless.
I agree, however, one dried chipotle is good in beans.

Yesterday, I made a Chipotle Ranch Dressing/Dip from bottled Ranch Dressing, two minced chipotles en adobo, a shot of Salsa Purépecha Salsa Chipotle, and a pressed clove of garlic. Easy and tasty.
All generalities are suspect, including this one.

re: cornbread. I use the dried chipotles sliced very thin and added to the batter, doesn't change the color. I think the effect you got is from the ones in oil or sauce. I'm not a purist about cornbread, my mother (the real southerner) wasn't either as she would throw things like crumbled bacon and chopped mustard greens into her cornbread. I often put a small can of cream style corn in mine along with the chipotle or with Hatch chiles if I've been in New Mexico recently. I think of basic cornbread as a start or a suggestion, it's rarely the same thing twice.
