Chili Verde Gold Starred

2 quarts of premade chili verde and 10 pounds of lean carne de Puerco, cut into 1” cubes, shook in flour, browned in hot oil then added to the chili verde to simmer for a couple of hours carried with it high hopes of lip smacking appreciation.

For a guy whose been exclusively wrapped around electronic test equipment for as long as I can remember, the freedom of venturing into the cooking world is not only fun, busy and tasty at times but rewarding when others taste buds break a smile.

After this last Christmas dinner adventure, at the behest of Christina’s tutelage, the height of dinner success was gold starred by my immediate family of 22. Either I didn’t make enough or as they stated, it was delicious and the Chili Verde was gone in record time. In addition, we also had Conchita’s tamales which made a big hit and so did the Enchiladas my mother brought, along with the frijoles, arroz, guacamole, tortilla’s, pan dulce (conchas), Flan pie, mom’s chocolate cake, appetizers, rompope and a 1.75 liter of Crown Royal Canadian whiskey and cerveza, we all filled to the brim. It was a good Christmas.
