Carne Apache

How many of you brave souls have eaten carne apache; how was it, and do you consider that it may hold some health risks?

My wife had a tostada de carne Apache the day before yesterday, at the Rotary Club fundraiser in Pátzcuaro. So far, she seems to exhibit no ill effects. The stuff looked quite appetizing, but I resisted sampling it. The homemade, Rotary version certainly looked a lot better than the off-color stuff sold by the vendor on the corner of the Plaza Grande.

I've eaten it and lived to eat some more of this delicious Mexican version of steak tartare. It's chopped tomatoes, onion, cilantro, chiles, and finely lean ground beef, all of which is "cooked" in lime juice for an hour or so. Call it "ceviche de res." It's one of the standard appetizers at the Restaurant La Campana just outside of Uruapan on the road to Paracho.

I think Jennifer's description as "ceviche de res" is more accurate than "a Mexican version of steak tartare" which implies the beef is raw. The lime "cooking" probably makes this OK if done properly but, considering the way meat is processed, handled and delivered in this country, one is taking a risk eating any beef not thoroughly cooked. There is a reason Mexican diners seem to prefer their beef well done. I'm with Anonimo, any of you wishing to eat this stuff can have my share.

There were periodic scandals in Northern California about reputable meat vendors such as Safeway supermarkets mixing old, grey meat with fresh meat to make hamburger. Imagine what meat vendors would stoop to here.

My sons' father -- a physician with a specialty in infectious diseases and a Ph.D. in epidemiology -- won't touch even medium rare meat in Mexico. Much less rare. He strongly advises against it.
