Caramelizing Sugar for Flan the Easy Way

Rose's question about caramelizing sugar for flan sent me back to my kitchen. Husband and children were amazed. Anyway ... I used 1/2 c. finely granulated sugar and 1 1/2 tsp. cold water - evenly spread the water/sugar mixture in the bottom of the Pyrex dish in which the flan is to be cooked and microwave on high. The number of minutes will depend on your microwave. I would guess anywhere from 3 - 5 minutes will work. Stop the microwave from time to time if needed and redistribute the mixture so it cooks evenly. Does a beautiful job! After removing from the microwave, immediately pour the flan mixture over the caramelized sugar and bake.

If you look further down in the discussion threads about flan recipes there's a link to a gazillion great recipes. Here's the one I use that's super simple:
Prepare the custard in a blender:
1 14 oz. can condensed milk
1 c. milk
1 Tsp. vanilla and/or almond flavoring
4 eggs

Then caramelize the sugar. Pour the custard mix over the caramelized sugar. Set the bowl in a water bath in a 350 degree oven and bake an hour or until an inserted knife comes out clean. Fast, easy, fancy! Can be served with whipped cream as decoration if you wish to clog your arteries really fast!

We ended up visiting friends, so I didn't get to make it. But I plan to make it next weekend, for sure.

Hi Georgia,
I wanted to write and say thanks again for the Flan recipe. I was very easy and everyone loved it. I added it to my notebook for favorite dishes. (It was e-a-s-y !!!)
