Calabaza Castilla

Anyone have any great recipes for this pumpkin/squash?

I was googling and found a site that said calabaza castilla is "curcurbita moschata" (and found another site that said it is "curcurbita maxima" , but those pictures look nothing like the one available at our closest super markets) -

So, if that definition is correct, I can make pumpkin pie, pumpkin soup, pumpkin flavored syrup (for coffee) and pumpkin bread from this "calabaza castilla" ? To be honest, I didnt cook alot of pumpkin from scratch before we moved, so I am not sure of the exact English translation for the Calabaza Castilla.

Last year, I did make Calabaza Castilla with piloncillo under the supervision of my suegra (she pretty much told me her recipe) , but honestly it was too doused in piloncillo for me to remember (and drizzled with leche or lechera) exactly how it tasted. That is not saying it didnt taste good, but I am looking for some other uses this year.


Any thoughts? Recipes?

It's calabaza de Castilla...Castilla as in Castille, Spain. This squash is extremely hard-shelled, be careful when you try to open it. Here's a common recipe:

Thanks for the clarification on the name. It was good when we made itlike that, altough the addition of anise seeds would have been delicious.

I must say, I am in love with the 1930s covered turkey pot you have in one of the photos, what a marvelous little fellow. :)

(And no offense nestle, but I will follow the taza de chocolate recipe, not that I dont trust nestle recipes or anything ;) )

PS , the writer behind the blog I posted also wrote a children books abut pumpkin moon empanadas, if you are looking for a childrens book. We dont own it, but it is on our wishlist.

If you talk about pumpkin there is only picture that come into my mind and that is Roasted Pumpkin and Butternut Squash Soup's picture. I had this soup five years ago in Mexico and I loved it. However, I forgot to note down the recipe. If you know the ingredients then do me a favor... let me know please!

I have had pumpkin soup and other dishes of pumpkin thousand times since I was a kid. I can't stand its smell now. I am so bored with pumpkin. Anyways, check out my favorite ground lamb recipe and let me know if you liked it.
