Well, my mexican grocer has failed me! I have been to every (6 of them!!) Mexican grocery store in town and no one has ayacotes. I am not even sure exactly what they are and have only been told that they are a type of red-colored bean. Anyone able to shed some light on this? I got a recipe for ayacotes stirred with mole and served as a botana on lettuce from a friend of mine in Mexico that I am dying to try. If I can't get ayacotes, does anyone know of a substitute? Thanks in advance!

Mexicans use pinto beans which are mottled beige with brown, red kidney beans and pinks - which are good for chili. There are cranberry beans -creamy with burgandy lines which Italians use for soups. I bet you can go to your local supermarket and use kidney beans and have good results.
