Arrachera

Can't Post | Private Reply
On two occasions I have had arrachera at resturants and for the life of me cannot find what cut of beef it is, or any recipes. It was extremely tender and flavorful. Could someone explain what arrachera is?

Thanks

There are hundreds of paths up the mountain,
all leading in the same direction,
so it doesn't matter which path you take.
The only one wasting time is the one
who runs around and around the mountain,
telling everyone that his or her path is wrong.

In Spanish, the cut is called falda. In English, it's skirt steak. Either way, it's marinated and then grilled.

Thank you Esperanza for the information. It, being so tender, I was afraid it might be stomach or other organ meat.

Mike, we buy arrachera from on of a couple places. One is a store called SuKarne, a meat distributor. Also from the grocery store (Mega, Soriana, etc). It comes pre-marinated and in a cryovac package. Whenever we serve the SuKarne arrachera we always get rave reviews. It is delicious, and easy - out of the package and on the grill. A "convenience" food well worth buying, IMO.

It's also good if you pound it out real thin put stuffing on it, roll it up and bake it. The stuffing can be anything of your choice.
