gluten intolerance in Spanish, please

Help, I have been south of the border yesterday with a friend who wants to be retested for gluten intolerance (since this condition is often misdiagnosed and the diet is not only a pain, but quite expensive, too) and, although they have blood and other tests for seems like everything down there, I could not get anyone (including a doctor) to understand what gluten is (I even tried "this thing in wheat, etc" and it did not ring a bell). I tried dictionaries (on line and classical) and no "gluten". Aargh.
Help, we will be there again in two weeks and it would be nice to know what test to ask for, so I'll appreciate if anyone could help.

Se dice intolerancia al gluten.

Gluten en español sigue siendo gluten.
